This is the whole reason we went into business folks.  If all I wanted was to make some money then I would have opened a Starbucks.  When I
wanted to go out and eat my options were so limited.  I said to Bekah, "someone needs to build a place where people can get good Organic
food at a reasonable price."  Well, 1.5 years later here we are...

A short story:  we know some brothers related to the famous Italian Ferrari car company / family. They started a  Bistro in Santa
Monica CA (Bravo Cuchina) some years ago. We lived near there.  Their food was and still is good.  But their Bolognese sauce
is very very good.  As you know finding a restaurant that really knows how to do some good sauces is a real task.  I have since
tried Bolognese pastas from many many restaurants.  I could never find one that matched up to the Ferrari boys... until tonight.  
Yours was a real treat and the best...wow.  Your  meatballs were also a real wow.  I never had anything so smooth and tender
like that.  Even mom's are not as good.  We are looking  forward to meeting you and more of the same.
Please feel free to use this story to your patrons.  I urge everyone to be sure to have some Bolognese sauce pasta.

Thank you for noticing.  We are constantly working and striving to improve.  I started with a great concept- homemade Italian food
using the highest quality organic & natural ingredients.  What I didn't realize was how important all the other things are, such as dim
lighting, large tables, proper music, cozy atmosphere, plants & flowers, effective marketing...and the list goes on and on.  I am sure
I still have a lot to learn.  But I am confident that as long as we continue to work hard, work smart, and NEVER compromise our
original concept- that we will grow to be one of the best restaurants in town.  A friend once said "You are a diamond in the rough."  
I think we become more and more refined with each passing week.

   This is the first time I've written to you, but- like all Valley residents who appreciate literate, creative and discriminating
writing- I've been reading your reviews for years.  So perhaps I should begin by saying "thank you and keep up the good work."  
That said, permit me to suggest yet another restaurant awaiting your verdict, one I think you will enjoy pronouncing.
   The restaurant is called Marco's Italian Bistro.  It may be a little out of your way geographically, but I think you will find it worth
the drive.  Marco's is located at....
   Now to the real story.  Marco's is a pleasantly decorated restaurant, lacking loud music, with efficient, gracious service that
seeks to enhance rather than overwhelm your dining experience.  The food is straightforward but dependable, of great quality
and delicious.  Many ingredients, we are told, are locally bought, as free from pesticides as possible, and organic, again when
possible and meeting the chef's standards.  Those, let me assure you, are high.  As humble consumers, we are at the mercy of
our own tastes, right?  I can do no more than tell you that we have never been disappointed by our dinners there, and I can't
imagine that you would be.
   I lived in Italy for several years teaching English as a second language, graduating to interpreting.  Since I worked long
hours, most of my meals, unless I was lucky enough to be invited to a private home, were at trattorias, bistros, salumerias, and
restaurants.  When I finally returned to New York, moved to Washington and then Phoenix, I found it hard to enjoy the food
even in so-called "fine" Italian restaurants.  Nothing tasted genuine, fresh enough, or as lovingly prepared as what I had
become accustomed to, until I ate at Marco's.  
   Not incidentally, the kitchen- which I had never paid attention to before- looked spotless, almost sterile, very reassuring in
these times.  My hope is that you will have as delightful an experience at Marco's as we have had, and I look forward to reading
or hearing your comments.
